we were in Ballard for one of their street fair/market few weekends ago.  Afterwards, we were looking for a place to get a coffee.  We looked up yelp and found a great review for Cafe Besalu, so we decided to go for a short walk to give it a try. when we arrived, I think it was about 1 hour before their close (early pm).  There were only 1 table of customer.  As we walked in, one of their lady was sweeping the floor very hard, that as sun shining thru the dust she sweep, made the inside of the restaurant look pretty scary.... We first looked at the pastry section, and it was pretty empty.  so we thought maybe we were there too late that most of the goodies were gone.  So we just end up ordered a cup of drink. I think we might have came in at the off time, that we didn't get the chance to experience their best like other reviewers had stated.  We are hoping to stop by again to see if we could enjoy the same as others have been.
The croissants I've been searching for since I moved to Seattle: flaky, buttery, and delicious fillings. I actually made the trek to Ballard for Un Bien (which was honestly just average), but now I'm glad I stopped by since I got to try Cafe Besalu. I got a Chocolate Croissant, a Pistachio Lemon Croissant, and a Cold Brew. The croissant itself is the perfect texture, golden brown, plenty of layers, etc. -- everything you want in a croissant. The chocolate was a bit too rich for my taste, so I preferred the pistachio lemon. The lemon came in the form of the outer glaze (which I wish there was more of, or a more sour glaze), and the inside was a hearty pistachio filling that struck the right balance of not too sweet. Meanwhile, the cold brew was forgettable. So far I've tried several bakeries in Capitol Hill; none have come even remotely close to Besalu. Definitely would come back for the croissants and to try the ham/cheese! PSA: the inside of the cafe is very warm.
Ginger biscuit!!  So wonderful!!  Especially buttery with little nibs of candied ginger throughout.  The perfect choice when sugar isn't what you want first thing in the morning!!!  Everything we tried was incredible. If you love quality pastries made by people who care enough to make outstanding pastries,  you need to visit!!!!
