Amazing!!! This was one of the best meals I've ever had! The flavors were so unique and delicious. The whole place was quaint with tons of ambiance. Everything about it was exceptional. Highly recommend!

Based on Yelp reviews, I chose Casa Chimayo Restaurante for dinner on a nothing-special Tuesday night. Not sure if it was a one-off or reflection of labor shortages in the industry more generally, but the front of the house seemed severely understaffed that evening, with only two people covering host and server duties for the entire restaurant. I selected a seat in the patio with a perfect view of the host station and watched party after party of potential covers line up expectantly only to walk away with disappointment on their faces after waiting for what they viewed to be a reasonable amount of time without being greeted or seated. When the servers could focus on the customers, they did their best to conduct their job with grace, however they were clearly swamped. I considered myself lucky to get seated, served and pay without too much delay. My portobello mushroom fajitas were tasty, however my experience was tainted by the scene of unhappy customers unfolding before me. While eating my meal, I was fearful that I would be held hostage at my table, waiting for my server to find time to settle the check. I was pleasantly surprised when my server stopped by for a check back amidst the chaos and used that opportunity to request the bill; she promptly returned and left a handheld at the table. After I paid, I felt extremely relieved, liberated to end my experience at Casa Chimayo at will. That said, I'd give Casa Chimayo another shot, assuming that my time there might have been the result of no call, no shows.

Fabulous meal and service! Enjoyed meeting the owners and adorable daughter. The pork in a banana leaf was juicy and flavorful with hint of cinnamon. And the coconut flan paired with Piñon coffee topped off a great dinner.
