We are most interested in the ambience, then the service, then the fare. The ambience at Cinco Jotas Serrano is quite satisfying; regional artifacts (hams in a case, wines nicely displayed,...) The lighting was somewhat subdued (3.5/5 on our scale) and it was very quiet (many asians eating and not speaking). The service was cordial and helpful (until she left) then the guys taking over, who could care less and had no empathy at all ("feed em and get em out" is how it felt). The fare is fantastic. Deep red acorn fed ham from the region, manchego to die for, and a reserve rioja that melted all the above into a wonderful slow culinary experience. All in all a great meal; leisurely and independent of wait staff. We always go for the food. But the waitstaff elevate the experience. Don't you think? Therefore, a 3/5.
