After a day spent in nintey plus degree heat on the golf course our group of four needed three things: air conditioning, beer, and food! So we made our way to Mountain Cowboy Brewing and Cuban Fusion to satisfy our three needs. ++ The staff was super friendly and on point with their recommendations and knowledge of their menu. Not to mention speedy! We got our meals in easily under fifteen minutes. Perfect for my grumbling belly. ++ The portions were large! My husband and I each opted for the Cubano: roasted pork, ham, swiss cheese, pickles and mustard on pressed Cuban bread with a side of fries each. Holy YUM! Our sandwiches were served up on a literal mountain of perfectly crisp fries. ++ The pricing was on point! At a mere $23 for both meals my wallet wasn't hurting after our dinner outing. ++ You can tell that there's passion behind each dish. They are carefully crafted an balanced to perfection! There was so much flavor in our sandwiches that I'm still drooling. Cuban Fusion was such a deliciously killer food truck! I can't wait for my next opportunity to try more of their delicious food-fare. Look out fried plantains - I'm coming for you! **Pro Tip: Keep up with them on Facebook for their upcoming curbside locations and special offerings. Yum!

After ordering half the menu I can confirm Cuban Fusion is ????. The portions are generous and the ingredients high quality. The Cubano is traditional but done well and the flavors are well balanced. Because we’re gluttons and didn’t want to cook all weekend we supplemented our sandwiches with Cuban poutine, arancini, and mushroom empanadas, all of which were at least tried and all of which are delicious. One word of caution - the habanero aioli isn’t not to be trifled with, an hour later and my mouth is still on fire.

Had Cuban Fusion at the Indigo Court park and it was unbelievable! Try the pork bowl, the plantains were to die for! Excellent if you have a sensitive stomach and/or are dairy and gluten free.
