This is the greatest place near Chapelle de la Trinite. The menu of French and Vegetarian cuisines is to the pleasure of all guests here. We had high hopes for Culina Hortus and had been waiting to eat there for quite a long time and I admit we came away with a rather mixed feeling. We had lunch and therefore discovered the unique 7-course menu. Is it the lunch formula which is more "simple" than the evening menu, in any case we found that a certain number of dishes lacked inventiveness and the "little something" which creates the hoped-for emotion . In this case, to cite just one example, the plate served as a main course, the "gnocchi carrots and chervil" plate, seemed quite disappointing to us because, in our opinion, it did not bring out any novelty or remarkable contribution. (the orange carrot association is known) even if very well executed. Beyond the title where the promise of a lot of work around a main ingredient shines through, we found that the little "kick" was often missing, which would have created surprise and sometimes unfortunately also a sensation that was too rich because a almost systematic presence of raw cream (it's good but it can unbalance the plate and the tasting). The butter served at the start of the meal, wild garlic butter, was however very good and so was the bread. Two dishes to remember all the same, one of the appetizers which was a vegetable meringue, seaweed confit with soy, julienned nori, surprising, delicious and with this very appreciable umami, and a starter, green asparagus, bergamot mayonnaise , lacto-fermented bergamot, herb salad, butter croutons, vegetable herb butter which was very very tasty and the asparagus and bergamot combination was happy and new for us. The wines served in pairing were all very good, with however a downside on the choice of wine for dessert, an asti spumante which seemed too sweet to us, and which added sweetness to the dessert instead of lightening it and making it lighter. 'balance with another choice. There you go, perhaps the wait was very (too much?) High, in any case the result did not live up to what we hoped for. The service was perfect and we were able to discuss some feelings at the time in front of attentive, cordial and understanding staff. We nevertheless recommend testing this table and forming your own opinion and wish the team good luck, but keep the very unpleasant feeling of a table that communicates a lot, perhaps too much but in our opinion, to the detriment of a work that we would have liked to be more unique, more impactful, and more in line with the title and the promise (vegetarian gourmet restaurant).
