Firstly it is terrible luck that you came on the only day we ever haven't had mint. Unfortunately the night you visited was our first night back after being closed for the holidays and our supplier was out of stock for mint which we weren't aware of until the order arrived shortly before we opened the doors. We sent a staff member down to the supermarket and the local fruit shop to try and remedy the situation with no luck and because we had been closed for 2 weeks we didn't have the usual back up stock. I followed up with your server who is still in training and it sounds like he has been a bit overly enthusiastic about suggesting his favourite drink when it wasn't quite the right fit for you. He chose it because it was white rum, citrus and refreshing and I was glad to hear from him that you really enjoyed it, however I agree with you that it was certainly a bit of a stretch to get from a crisp, clean mojito to something with the addition of ginger which is quite a bold flavour. We are aware that we wont get it perfect every time which is why the staff always make sure to check in once you have tasted them and make sure you're happy. In future please don't hesitate to take us up on the offer to make you a different drink. We would always much rather make something else than to have anyone drink a cocktail they don't love. We use the large block ice for the simple reason that the one block reduces the surface area so it melts more slowly and your drink lasts longer before it gets watery. The ice molds are developed to take up the exact same amount of room in the glass as normal machine ice and we do once in a while get someone who prefers normal ice so it's absolutely no issue for us to pop it over regular ice instead. I'm so sorry to hear this wasn't done for you on your visit. Our cocktails are all $23 each as the vast majority of our recipes contain 60-90ml of liquor. I'm so sorry we weren't able to make a mojito on your visit and that your drink wasn't quite right for you. Thank you so much for letting me know where we are falling short. I now have a list of specific things to work on with your server and the other trainee staff at our training sessions this week. Thank you for your help it really is so vital for us to hear these things so we can fix them. I hope you'll give us another try some time, I promise we will have mint. All the best, Heather More
