-
Course 3 - Sashimi* of the DayWe present a traditional Japanese sashimi selection featuring the freshest fish available—from Hawai'i's waters and select seasonal imports.
-
Course 4 - Shio Koji-Grilled FishFresh local fish lightly marinated in house-made salt koji, then simply grilled to highlight its clean, delicate flavor and firm texture.
-
Course 5 - Seasonal Kakiage TempuraCrisp lightness, gathered in one bite. A delicate medley of seasonal vegetables—including locally sourced zucchini—gently bound in a whisper-thin batter and fried in the traditional kakiage style. Light yet expressive, each bite offers layered textures and subtle sweetness, bridging the savory courses with graceful warmth.
-
Course 6 - Unagi DonburiA classic, reimagined for the finale. Freshwater eel, carefully grilled and brushed repeatedly with our house-made tare, developing a glossy glaze and gentle caramelization. Served over warm Japanese rice, the balance of sweetness, smoke, and umami brings the evening to a deeply satisfying close.
