Visited June 2015 - Glacis Beisl, Vienna A neo-beisl tucked behind MuseumsQuartier: you step down into a courtyard garden rather than off the pavement, already a clue that this is a modern take. Vines and pergolas soften the concrete walls, and once inside the dining room the dark-green tables, clean lines and mounted stag head nod to tradition while marking a new interpretation. The service was warm and articulate, easing my fears of my lack of German. I asked for something typically Viennese - schnitzel came the assured reply. It was textbook: veal pounded thin, breaded and fried to a delicate crispness, garnished with lemon. The potato salad was unusually weighty with beetroot, cucumber and lollo rosso, inverting the expected balance between protein and side - an observation that only sharpened the contrasts of flavour. An accomplished plate which could have done with a pinch more salt. 8.5/10. Dessert was an orange parfait with raspberry coulis, a Viennese affection for ice creams refracted into something seasonal. Moderate sweetness, a citrus tail, and a velvety mouth-feel: delicious, though I’d have grated a touch more zest over the top. Another 8.5/10.
