The style of service here was very similar to American fine dining restaurants, and so water was always on the table, once a beverage was finished, our server was always quick to ask if we wanted another, and our flatware and other needs were constantly refilled. Regarding wine service, I ordered the Franciacorta and my partner ordered the Nebbiolo. I was given a taste of my wine, while she was not, which was a bit strange, but not a huge deal as it was likely a Coravin bottle. The amuse bouche portion was delicious and fun, and the secondary bread course was good, but the first was a bit odd—some elongated croutons served in essentially a flower vase. It seemed a bit pretentious and didn’t taste like much. Our first ordered course, the rigatoni, was delicious, and we ordered that to share as our appetizer, which they kindly split for us without us having to ask. Once that was done, I ordered the double-cooked pork belly, and my partner ordered the beef crusted in pistachio. The pork was cooked well, but the skin was a bit tough. It would have been good to have it either much softer without the skin entirely or to have crispy skin, but that may just not be what the Chef intended, in which case it’s fine, just not for me. The beef was cooked perfectly, but the flavor from the pistachios was a little bit off as well and seemed under-seasoned. The desserts were all delicious, but if I had to choose one from the sample platter for a full size course, I’d have chosen the white chocolate parfait, which was truly unique and delicious but still approachable.
