Met Enrico Wahl, the cheeky charming chef and asked for the dish he is most proud of. His reply 'the club sandwich' made me laugh. He looked at me sternly. "It's hard to make a great sandwich, to balance all the ingredients to perfection. A fillet mignon is easy." I opened the paper (The Saturday Paper) to see Andrew McConnell, a Melbourne chef saying the exact same thing and suggesting sandwiches for Christmas. Okay, I'll bust out of my cultural sensitivities - eat only the 'country of origin' food mentality and ordered the pescatarian version - the crab baguette. (Enrico recommended this as a non-meat option.) A mountain of fresh king crab dressed in an elegant tangy light creamy mayo with shards of green chives throughout arrived. Big enough for 2 we have ordered it 3 times now.
