Came here because everyone we talked about knew and recommended this place.  Nice ambiance, great service, and clean bathrooms.  Lots of staff hovering around waiting to serve you.  We came rather late in a Sunday night and they were already out of the tortas ahogadas.  Kind of bummed as I had been looking forward to trying them.  My food was good not great.  My wife's fried chicken was the same nothing that blew my mind but it was good.  The sauces where very good and again service was excellent.
La Chata is a well known restaurant located in the historic center of Guadalajara.  When walking towards the establishment, be prepared to see a line wrapped around the corner. When I visited La Chata I came with local "Tapatio" family members. They were not aware of its fame, so perhaps this locale is only famous with tourists. Nevertheless, we persisted.  We waited for about an hour before being seated.  Service was quick.  Within five minutes, we all had a drink in hand.  The horchata is recommended, the lemonade is strongly discouraged. I ordered a special combo consisting of two enchiladas, two flautas, and two sopes.   They were very accommodating.   I throughly enjoyed the two flautas and sopes.  The sopes were a flatter, distinct variety.  Delicious.  The enchiladas, were not much to write home about.  Lacked sauce and flavor.  What's more,  my aunt received a chicken mole that was undercooked.  When we mentioned this to the waiter, they immediately asked whether she wanted another.   They also had two other managers come to check the food.   They wrote the meal off the final check.  I was very satisfied with how they handled the situation.   Overall, I give this establishment four stars.  The food is tasty, but not extraordinary.  It is a nice place if you're looking to have a comfortable meal, with awesome service.  It's a bit pricier than Mexican street food, but that's to be expected. ¡Buen Provecho!
La Chata has a fame being recommended restaurant at the old center of Guadalajara, and I can only agree. Very busy place it is, with a constant queue outside on the street, while waiters are extremely fast. In our case, it took around 25 minutes to get in but be prepared for much longer waiting times in peak hours. Based on my experience, the waiting is worth it as the food, real mexican treats, are tasty and generously served. All good and decently priced, with courteous service.
