I’m traveling through Mexico for more than a. Year now. And have another 6 months. Pangea was my last meal out in Monterrey and I was blown away. I’m a retired chef. From California. I don’t like anything. Tonight it’s 10 days after the best lunch I’ve had in ages, at Pangea. It’s world class. They understand the details of international service Like no where I’ve ever been. Except maybe french Laundry/per se. I was given a menu in English and my companion in Spanish-though unnecessary it was soooo thoughtful. One of the headwaiters .... seemingly hung aroundTo make sure I would understand the Spanish before leaving our lovely server to care for us. And this is noting that my date was a local. The beef tartare was by far the best flavored beef I’ve had since Northern California ,grass-fed, yada yada, and was NOT overwhelmed by the garnishes , but perfectly Complemented . The tomato soup was delightful and the presentation made It Special. My duck entree was perfectly seasoned, perfectly cooked -meaty and flavorful. The garnishes were lovely and nothing overpowered the luscuios duck. The fig and goat cheese salad ( a California-Italian staple) was really good. From me that’s saying a lot. I’m in another city sitting plotting myReturn to Monterrey :-). And begrudging that Pangea wasnt my first stop! so I could’ve returned there a few moreTimes. GO! Be and Spoiled
