Food delicious, Chef Paul friendly...made us feel like we had our own personal Chef.  Although there are only 3 tables, it was very charming and super clean... if your in Hilo, you need to experience it for your self.
So happy we decided to try Paul's. I didn't realize how small it was so we didn't make a reservation and just showed up. They said we could be on the waitlist and they would call us when there was an opening - gave us an estimate of 30 min but really it was about 20. When Paul called he let me know that they had a reservation coming in after us so we would come now but would have to be done in 50 min or we could come a bit later and not have a time constraint. We chose to go then as we were a couple of steps away at the market. The service is fantastic. Paul used my name the entire time we were there and came over to explain the dishes we were having trouble choosing between. The girl helping him was fantastic too. We got the Breakfast Caprese and Eggs Benedict. We would have gotten the waffle too if we had more room. The food was phenomenal. Paul has extremely limited space to cook so he can only do one meal at a time and told us so. It was perfect for us as my husband and I usually like to share so we can try more than one dish at new restaurants. As we were finishing the caprese the Benedict came out. Both came with a cup of fresh fruit that was refreshing. The sauce on top of the Benedict was a rosemary sauce with a hint of lemon that I actually liked way more than traditional hollandaise. The green and veggies that came on it were fresh and the egg was poached just how I like it. Eggs Benedict is one of my favorite breakfasts and his was one of the best I've had. The Caprese wasn't something I'd had before and it didn't disappoint. The mozz and parm on it were great and the bacon was super crispy. The tomatoes in the evoo with garlic and a hint of chili flakes paired well with the poached eggs and it was all set on well toasted crostini. We were super bummed we weren't able to make it back before we left.
Small (only 3 tables) cozy place with very tasty breakfast.
