Pausa was a truly delicious experience - every dish was described impeccably and featured little surprises that my friends and I really enjoyed. Reservations are highly recommended. If you are looking for a table at prime dinner time, call if not available on OpenTable. We came on a Saturday night scoring prime reservations at 7pm. Looking over the menu, several plates caught our eye and after asking for recommendations, we were basically given a full tour of the menu from our waiter, Carlos. He was also conscientious taking note of a nut allergy one of my friends has. We ordered 4 dishes to share and with the speed of Pausa, this was more than enough for us. Foodservice is deliberately slow to give you time to take a break from the hustle and bustle outside. However, I will admit that we definitely thought our starters were a little toooo slow arriving well past 8pm. Good thing we had some spritzers to keep us busy! Still, the food speaks for itself! For starters, we opted for the 2 x 2 build your own charcuterie plate. For salume, we opted for the prosciutto di parma (aged 24 months) and the salame del doge (squid ink, lemon, garlic). Both were amazing! For formaggi, we opted for the robiola due latti and parmigiano 5 year. That parm was otherworldly! It was craggy and crystalline, but had the most amazing salty yet nutty bite. The board is also served with grilled bread, black truffle honey, a strawberry compote, pickled veggies, and a bit of lard. Up next was the grilled bone marrow. Pausa's features bone marrow topped with caramelized red onions and shavings of blue fin tuna heart on top. You will absolutely pick up on the smoky/brininess from the tuna but it really only accentuates the lusciousness of the buttery bone marrow. Wow. Would order again in a heartbeat! For mains, we opted for the lamb sausage pizza and the pig's blood spaghetti. By far, the spaghetti won for me. The pig's blood is combined with the spaghetti making process which gives the dish a very earthy taste. An amazing amatriciana sauce then hugs the al dente noodles which is topped with guanciale, diced tomatoes, and generous sprinkling of pecorino romano. As for the pizza, it's a 3 day Neapolitan dough which had an excellent chewy texture, but ours was a little burnt. This, unfortunately, took away from the delicious combination of figs, lamb, and saffron for me. To close out the meal, I had myself a cappuccino and it was honestly one of the best I've had of late. The foam was luscious and thick and the coffee was smooth and not too bitter. One friend tried a moscato and the other tried the shakerato cocktail. Both were also delicious choices. Overall, Pausa is a splurgy casual choice but features some excellent dishes. I'd definitely recommend it for a try at least once!
