Rincon Del Sol is pretty near Naropa University. The key aspect of this restaurant is the Mexican cuisine. Come to Rincon Del Sol to try perfectly cooked salsa & chips, stewed steaks and chicken. Rincon's  Happy Hour --- we tried it.  Not so happy.  High  price for what you get. They charge $2.99 for a two bite taco. I have always thought Happy Hour was somewhat special, not at Rincon.  I feel they have deceptive advertisement.
Oh man, this wasn't a good meal. Let's get the disclaimer out of the way first: we're passing through Boulder on our way from Southern California, so we've been pampered by good Mexican food in the past. That said, our expectations were pretty muted and we were still left extremely disappointed. We ordered a shrimp fajita, and there was no sizzle. It was super oily and tasted like it had been microwaved and tossed on a plate. The fajita fixings were bad, too, the rice was mediocre and the shredded cheese was weirdly half melted. We also ordered a chicken Caesar salad-based on our waitress's recommendation-and what we got was a dressing-less spinach salad with black beans, avocado, rubbery chicken, and no dressing. We asked if we were given the wrong plate by mistake, and she said no, this is their caesar salad. So we asked for some dressing for our CAESAR salad. She said, no joke, "what kind?" We asked for Caesar. She said they had that but then came back a minute later and revealed they only had blue cheese. No explanation why was given. What the hell? We got some blue cheese, and it was sour. Maybe it's because we came in 50 minutes before closing and the kitchen was in a weird state, but they should have TOLD US and we would've gone somewhere else. Look, to be honest I'm getting angry again just writing this review. Suffice to say the house margaritas and service we're both mediocre, too, but it's not worth expanding upon. This place is AWFUL. Avoid, or don't, but don't say you haven't been warned.
Great local Mexican restaurant! Staff is always very friendly and make it a point to make you feel at home. Margaritas are amazing and food never disappoints. I have been visiting this restaurant for several years and have to give a shout out to Froy for always being so attentive in our service. If you are in the boulder area and a looking for a good casual Mexican restaurant with a taste of home I highly recommend you visit!
