I had been putting off this appointment with an Umbrian restaurant that absolutely did not disappoint expectations for too long. In an always fascinating Spoleto, dressed in rain and a beautiful warm light, the Apollinare is a small temple of hospitality. The joy of not finding the usual tasting menu, with the a la carte one that abundantly satisfies the needs of all palates, with the presence of absolutely selected cuts of meat, fish, truffles and vegetables. The room is firmly managed with experience and grace. The cuisine has well-defined character and tastes, wisdom and craftsmanship, excluding any legitimate possibility of judging the balance of the dishes or the use of killer ingredients that can cover a whole of absolute level. One of those places that has chosen to shine even without the slavery of the stars, but which would have the right to have one.
