Honestly being from Texas I don't know if I have different taste buds but this was far from decent barbecue

SALT AS A FLAVOR OR SALTY Chef Thomas Keller stated, "Salt brings out the flavor." However I feel that too much salt can make the dish salty. Leading up to the 4th of July weekend I ordered certain items to be delivered at my house while I was at work. For lunch I ordered a large order of brisket, a large order of sausage, and two orders of chicken lollipop. Some of these items were not only for me but also for my parents. The concern I might have were these items were going to be too salty for my parents. In fact these items I ordered ended too salty for me. The salty bacon on the chicken lollipop overwhelmed the chicken. I couldn't taste the spices of the bratwurst as the salt masked them. The only thing that wasn't salty was the brisket. With the exception to the brisket the sausage and chicken lollipop weren't really what you call mainstays of BBQ items. However I couldn't really give a review of the BBQ eatery unless I ordered ribs and chicken. About three l weeks later I ordered from Smoking Pig BBQ to be delivered at my house for dinner. This time I ordered a 3-piece BBQ dinner combo, which included ribs, pulled pork, and chicken quarter. I also ordered burnt ends. This time these items weren't salty but flavorful. The ribs were so tender the meat fell off the bone. The pulled pork wasn't dry and stringy as I've had at some BBQ eateries in the past. The chicken quarter was succulent. The burnt ends with its sweet, savory texture tasted like meat-candy. The first time I ordered I was going to rate my lunch as two stars. The last time I ordered my dinner I was going to rate it as four stars. Therefore by averaging my two outcomes, three stars seem to be an appropriate rating for me.
