I went to Truth BBQ because I wanted the full Texas barbecue experience and decided to stop pretending I was going to order sensibly. The place has a fun, almost slightly over-the-top atmosphere, but the food is still the main reason you're there. The whole process feels like you are about to make some questionable decisions with a tray full of smoked meat. I went with brisket, pork ribs, turkey, and tater tot casserole. The brisket was the standout for me. It had that smoky crust and tender interior that makes you immediately understand why people talk about barbecue this way. The ribs had a deeper, richer flavor and were a little messier to eat, while the turkey was surprisingly good and didn't feel like an afterthought. The tater tot casserole was the side I kept going back to even after I was already full. Then came dessert, because apparently I had learned nothing. The banana pudding was creamy, sweet, and way more dangerous than it looked. At that point I was completely stuffed but still managed to keep eating it. The whole meal was heavy, but that is kind of the point. I wouldn't come here looking for a light lunch. Come hungry, get a few different meats, grab a couple sides, and accept that you will probably be thinking about food again much later than you should. If you like BBQ, it's definitely a bit better than average bbq experience. Though they're often sold out of things I prefer like pulled pork (I'm not huge on brisket or sausage). Corn pudding lived up to the hype, and I always like banana pudding but this is SUPERIOR banana pudding.
