Perhaps the most Australian of all fish, barramundi received its name, which in the language of aborigines means "a major river fish." It is served in restaurants throughout the country. It is better to first fry or brown the skin (less often it is cooked in butter or deep-fried), and it is usually served as a fish steak flavored with greens and butter.
