Jamon is the dried raw pork ham of a thoroughbred Iberian pig, fattened with acorns. The process of cooking goes through several stages and takes from 12 to 48 months.

This Spanish national delicacy is prepared from the hind legs of a pig and has two main types: jamon serrano and more expensive jamon Iberico often called "pata negra".
