Venosta Valley apricot dumplings
Sweet and flavorful, Tyrolean apricot dumplings present a real culinary pleasure. Thanks to the extensive apricot orchards, the juicy fruit is an important ingredient of most local dishes. Its soft sweetness and slightly fluffy skin go wonderfully together with tender dough and crunchy coating. Served both as a main dish or a dessert.
Step 1. To cook the dough, take the potatoes first, peel and cut them, then boil in salted water. Once ready, take them out of the saucepan and mash with a potato press.
Step 2. Add the yolks, a pinch of salt and nutmeg, and blend with the liquid butter. Knead the mixture briefly by hand, then add the wheat flour, and roll out. Cut the dough into squares.
Step 3. Carefully remove the apricot pits and put the sugar into each fruit. Wrap the sugar-stuffed apricots with the dough and boil the dumplings in salted water for 16 minutes.
Step 4. To make the breadcrumb coating, mix the melted butter with the breadcrumbs, sugar, and cinnamon. Fry briefly in a pan until light brown.
Step 5. For the vanilla sauce, combine some milk with the zest, salt, and vanilla, then bring to a boil. In a pan, mix the sugar with the cornstarch, add the yolks, then pour the rest of the milk.
Step 6. Add the vanilla milk to the yolk mixture and boil off. Let it cool down a little, then add the cream.
Step 7. Once cooked, take out the dumplings from the water and cover generously with the prepared breadcrumbs. Place them on a plate and pour with the vanilla sauce.
