  • 3/4 cup of green paste
  • 1 thumb-sized piece of fresh ginger, finely chopped
  • 2 cloves of garlic, finely chopped
  • 2 optional red chilies, sliced into half centimetre pieces
  • 1 bell pepper, chopped into chunks
  • 2 stalks of celery, chopped into small pieces
  • 1 large carrot
  • 1 small broccoli
  • 1.5 cups of brown lentils cooked separately until tender
  • 1 tin of coconut milk
  • 1/4 piece of vegetable stock cube
  • salt to taste
  • 2 teaspoons of sugar
  • 2 teaspoons of starch (dissolved in a bit of cold water)
  • 1/2 cup of rice cooked separately
  • Toppings for serving: plenty of fresh cilantro, lime or lemon wedges, grated fresh ginger, shredded coconut

Step 1. To prepare this dish, start by cooking rice and lentils separately. Boil the lentils until tender, while the rice should be cooked according to its packaging instructions.

Step 2. While the rice and lentils are cooking, chop the vegetables. To ensure that the carrots and broccoli stems, which take longer to cook, are perfectly prepared, steam them first. Place a colander above the lentil pot and let them steam while you chop the rest of the vegetables.

Step 3. While waiting for the vegetables to cook, fill up a kettle with water and set it to boil. Then heat up a large pot and add some oil. Once the oil is sizzling, toss in some fresh ginger, fiery chilies, zesty pepper, garlic, crunchy celery, and a pinch of salt. Give it all a good stir and break up the veg stock with your hands, infusing your dish with even more flavor.

Step 4. Next, add the curry paste to the pot, stir for a couple of minutes, and add about a liter of hot water from the kettle. Add the remaining vegetables and let the mixture simmer for five minutes.

Step 5. Once the lentils are cooked, strain them and discard the water. Add them to the main pot, along with a tin of coconut milk and sugar. Adjust the seasoning as necessary by tasting the mixture.

Step 6. To thicken the sauce, add diluted starch and let the mixture simmer until the vegetables are tender. If you like a thinner consistency, simply add more water until it's just right.
