Meatloaf is a portion of essential comfort food that is as American as hot dogs and hamburgers. It came into existence during the hard times of the great depression because it could feed more people with less meat. Today it is a household classic, prepared all over the US, and is a great way to stretch the proteins and use up excess leftover vegetables. Though every person has a way of preparing it, this classic dish has now made its way into the fine-dining world. Undoubtedly, one of the best versions of this dish is at Root and Bone in Miami, and so here is a guide to help you to create this classic dish in the comforts of your home.

Cooking directions

Ingredients

  • 4 pounds of boneless short ribs (5 pounds of bone-in short ribs)
  • 2 tablespoons olive oil, plus 2 teaspoons
  • 4 cups julienned onions
  • 2 quarts of chicken or veal stock
  • Salt
  • Freshly ground black pepper

Step 1. Take 2 teaspoons of oil in a large skillet pan and caramelize the onions on low heat until completely golden in colour. Season with salt and pepper and stir frequently to avoid burning. Set aside the caramelized onions to cool.

Step 2. Preheat the oven to 325 degrees Fahrenheit. Take the short ribs and season with salt and pepper and mix till all the pieces are evenly coated. Heat one tablespoon of oil in a large pot or dutch oven and sear the marinated short ribs, in batches if required, to get a nice colour on the ribs. Then add the chicken or veal stock to the pot with the caramelized onion and cover the pot. Braise the mixture in the oven for about 5 to 6 hours, or till the ribs are tender. Then remove the pot from the oven and let the ribs cool in the pot.

Step 3. When the mixture is cool enough to handle, remove the ribs and put them on a cutting board. Strain the braising liquid into a pot and set aside the onion for later. On medium heat, reduce the liquid to half.

Step 4. Remove any bones from the ribs (if any), and shred the meat in a large bowl with the fat. Add a cup of the braising liquid to the meat and set aside the onion. Blend this mixture well in the bowl and adjust the seasoning with salt and pepper. Pack the meat mixture in the 8x8 pan and place parchment paper on it, then use another pan to press the meat from the top with the bottom side down. Place these pans on a baking sheet to collect any juices and use 4-5 cans to compress the top pan. Refrigerate this mixture overnight.

Step 5. Run a knife along the edges of the pan to release the meatloaf from the sides of the pan. Briefly heat the pan on the stove for about 15-20 seconds and then turn the pan upside down to release the meatloaf. Cut the meat into 2x2 squares.

Step 6. For each serving, sear the meatloaf squares in a cast iron pan on medium heat, then place them in an oven at 325 degrees Fahrenheit for 5-10 minutes to heat the meatloaf through on the inside.

Tip: Refrigerate the meatloaf mixture for 48 hours for best results and serve the meatloaf with mashed potatoes and tomato relish.
