Ingredients

  • 20 pitted medjool dates
  • 4 tbsp raw cocoa powder
  • 1 tbsp coconut oil
  • 1 tbsp of maple syrup
  • a pinch sea salt
  • for garnishing:
  • 1 tbsp raw cocoa powder
  • 2 tbsp unsweetened shredded coconut
  • 2 tbsp shredded pistachio

Step 1. Put the dates in hot water for 2 hours.

Step 2. Put all the ingredients in a blender and puree until thick paste is formed. If it is too soft or liquid, add some dark cocoa. 

Step 3. Pour it in a bowl, cover with film and let cool in the fridge for at least 4 hours.

Step 4. Take it out of the fridge, it has to be hard. With a small spoon take a bit of the dough out and with wet hands roll the paste into balls. You'll get about 16 or so truffle balls.

Step 5. Spread remaining cocoa powder on one plate and shredded coconut and the pistachio on other two plates. Roll some of the balls in cocoa, same for coconut and pistachio shreds.

Step 6. Place in the fridge for 1-2 hours to set. Then take them out and enjoy!
