Toronto is the largest city of Canada and home to more than 200 ethnic origins. Only 56% of Torontonians have English as their mother language, and the second most spoken one is Chinese. Toronto is blessed with 43 km of beautiful shoreline and has 15 Toronto islands — a car-free community, which can be reached by foot, bicycle, or even canoe. They are home to some pretty beaches and hiking trails, paved walking paths and boardwalks. These beautiful surroundings are full of beauty and Zen, that’s why it’s not a surprise to meet so many people from all over the world here. The local restaurants are full of healthy and fresh foods, and this recipe of Zen bowl is one of the most favorite ones among Torontonians!

Zen bowl with soy ginger sauce
This is an extraordinary veggie lover dish, which can be cooked with leftovers and any products you have in the fridge. In this recipe we use kale, asparagus, peas and Brussel sprouts — they provide a basic amount of protein and vitamins to your diet. However, you can praise your bowl with any protein you need — salmon, tofu or chicken, or use hemp seeds to make it richer and more nutritious. After you cook it, pause for a minute and then partake in your Zen bowl — an original recipe from The Poke Box restaurant in the heart of Toronto!
Step 1. Let’s cook Soy Ginger sauce first! Strip and mince up the ginger and the garlic. Save a teaspoon of garlic, you will require it later. Add 1 cup of soya sauce, 1 cup of sesame oil, 2 oz of minced ginger and 2.5 oz of minced garlic and whisk well until it’s totally mixed together. Pour into a container and refrigerate. You can keep the sauce as long as 14 days in the ice chest and use it with vegetables or noodles.
Step 2. Heat your canola oil in a big sauté dish on medium-high. Sauté your minced garlic, diced onion and pineapple for 2 minutes. Then add shredded Brussel sprouts, chopped asparagus and hacked snow peas. Sauté for one more 2 to 3 minutes until your greens become a brilliant shade of green. Season with salt, pepper and chili flakes.
Step 3. Add the kale and cook for around 1 to 2 minutes, add your cooked rice and blend until everything is consolidated. Add your 2 liquid ounces of soy ginger sauce. It will relax the rice adhered to the lower part of the dish.
Step 4. In another skillet, with a little oil, cook an egg as you would prefer.
Step 5. Cautiously move your sauteed veggies and rice onto a plate or into a bowl and top it with the egg.
Step 6. Decorate with fine diced red peppers and enjoy your veggie Zen bowl! You can add any protein you need — grilled salmon, chicken or tofu.
Bustling and populated Toronto has so many places where everyone can slow down for a while, to get back to life and feel their own Zen. A quarter of this metropolis is covered with trees (over 10 million of them around the city), not to mention beautiful lawns and parks where people do yoga, jogging, or meditation during the lunch break.
