Ristorante Ad Hoc was our last and most expensive meal on the trip, so we were honestly really excited and wanted to love the meal, but unfortunately the food fell flat for us. Overwhelmingly, the impression we got was that the food was uncomfortably rich and salty. This is normally fine in a tasting menu format, since other dishes are usually able to balance the richness with sweetness or acidity, but we found that not a single course except for dessert provided the brightness we were looking for. You could argue that the single cherry tomato on each dish was meant to serve this purpose, but it unfortunately wasn’t enough for us. The result was that our palettes were fatigued with the flavor of fat and truffles being repeated in every dish. While I understand that truffle normally pairs well with fat to release the flavor, and Roman cuisine in general tends to be fat/salt forward, the tasting menu format gives the chef a medium to incorporate relief unlike the standard tavern style menus. Our waitress informed us that the saltiness of our carbonara was because of the pecorino and Parmesan, but my wife and I frequently cook carbonara with pecorino and guanciale, and have had 3 other delicious carbonaras in Testaccio that were not nearly as salty as the ones here. My wife called it “the saltiest thing she’s ever eaten”. Besides the food, the service and atmosphere were both great, but unfortunately could not make up for the disappointing meal. On a positive note, the truffle was very fragrant and shaved generously throughout the meal. Perhaps the land and sea menus are better balanced, but both the Roman and truffle tasting menus left the same impression on us. Food: 2 Service: 5 Atmosphere: 5 Price per person: €90–100

Both menus are intentionally built around rich, deep and traditional flavours, with truffle playing an important role throughout the experience. We understand that this style may feel too intense for some guests, especially when compared with a lighter or more acidic interpretation of a tasting menu.That said, we take comments about balance and seasoning very seriously.
