There are layers to the way it operates, as if an older form is still present, quietly supported by a newer system underneath. The meat is served with a balance of uniformity and slight variation. Much of the preparation has already been done elsewhere, with the meat being shaped and portioned before it reaches the table. At the same time, there are moments when the edges feel less defined, when the cut has a slight irregularity. This creates a subtle tension between control and spontaneity. The pricing range is wider than expected, and this influences the experience. Some dishes are more accessible, while others have a more defined texture or depth. The menu embraces these differences, allowing the meal to evolve based on your choices. Went for dinner at 7pm on a Monday. Immediately got a table, but the waiter just showed it to me without further comment. I ordered the basic all you can eat option (¥3938). The meat felt a bit too cheap for this price, but the 80 mins were more than enough to get full. The ambience was ok, but it felt a bit old. Need to try again with one of the higher class options.
