Meister's shop. Bar Anthem. The Tokyo Meister System, established by the Tokyo Metropolitan Government in 1983, is the provincial governor's award given to particularly outstanding technicians working in Tokyo who set an example for others. Of the 1,700 meisters selected until last year, only 6 were bartenders. Atsushi Asakura, the owner and bartender of Bar Anthem, is one of them. (Selected last year) After traveling about 1,000 kilometers, I entered Tokyo and was exhausted, but I didn't want to waste my only night in Tokyo, so I came here. Unfortunately, there was no Asakura-san, but it was a great bar that did not disappoint one bit. The first drink was gin fizz. The acidity is somewhat restrained and sweetness prevails. When I asked about the host, he explained that Silent Grass was used as the main ingredient and Martin Miller added depth of flavor. Personally, I thought it would be okay to just use Martin Miller, but that's just my taste. The second is a sidecar. I feel bad if the bar doesn't order it. I thought it felt similar to the sidecar I made, so at first glance I saw that Curacao was Grand Marnier. You have the same taste as me. If I order Campari soda, should I add lemon juice? He asks. I asked if it was that kind of recipe, and they said it was tailored to each customer. I thought about asking for just the zest, but I was afraid it would seem too picky, so I told him to do whatever was convenient. A slightly heavier type compared to the style I usually enjoy. it's good. Whiskey sour. I didn't think anything of it and then the one with egg white came out. It seems like you are confident in shaking. It's been a long time since I had a whiskey sour full of white foam. It's soft. At this level, I sometimes think of a whiskey sour with egg whites. Lastly, Daiquiri. This is the first daiquiri that brings out the flavor of rum so well. I was so moved that I forgot all the alcohol I drank earlier. It is understandable that Hemingway was crazy about this drink. Owner Atsushi Asakura is famous for saying things like, ‘Drink a gin and tonic at a bar you’ve never seen before.’ or ‘When you drink a gin and tonic, you can tell the bartender’s attitude toward cocktails.’ Gin and tonic is everyone's favorite and most popular cocktail. It is the belief that the level of effort a bartender puts into maintaining the perfection of these cocktails, which he will make tens of thousands of glasses over his lifetime, reveals his mindset as a professional. As I was ordering my fifth drink, I told the bartender, who had commented that I was enjoying my drink, that I was sorry for making such a troublesome order, and the response I received was surprising. "no. I am grateful. “Thanks to the people who order cocktails that I don’t make often, I don’t forget the recipe.”
