Modern style chicken restaurant. About 50% of the meal is typical kushi, the rest are composed dishes with seasonal ingredients. Some very delicious and unique preparations, especially the stuffed chicken wings and super smokey soborodon. Kurosatsuma chicken from Kagoshima is featured.

This was one of the best meals I have ever had. The chef is humble and absolutely incredible. In haute cuisine, it is sometimes easier to make beautiful food, than provide a beautiful atmosphere to eat beautiful food. this is the latter. He used to work in a 3 star Michelin restaurant and that shows! Could not be more impressed! Words cannot do this place justice. It’s a mistake to not come. Aramaki yakitori is a labor of love, with no detail overlooked. What first astonishes you is the meticulous attention to ingredients. The owner personally selects fresh, morning-slaughtered chicken, carefully choosing the optimal origin and brand for each cut. For example, the tender, flavorful thigh, the perfectly balanced neck meat with just the right amount of spring and fat, and the liver with its melt-in-your-mouth texture—each is in its prime. The secret to maximizing the potential of these ingredients is the expert grilling over binchōtan charcoal. The intense heat sears the outside to a crisp, fragrant finish while locking in the juices, resulting in an astonishingly succulent interior. It's as if a thin film has been placed on the surface of the meat, condensing all the flavor. The owner’s mastery is a true art form, expertly judging the perfect heat for each part—rare for the breast, crispy for the skin, and velvety for the liver. Watching their skillful hands from the counter is one of the pleasures of dining at New Maki. The variety of rare cuts is particularly impressive. Items like soriresu (oyster meat), tsunagi (connective tissue), and chōchin (lantern) are rarely seen at typical yakitori shops and are offered depending on the day's stock. The cooking methods, which bring out the unique texture and flavor of each cut, will make you rediscover the depth of yakitori. Taking a bite of a chōchin, you’ll be stunned by the harmony of the rich, melting yolk and the plump texture of the oviduct that follows. Seasonal side dishes and exquisite drinks enhance the experience. The seasonal vegetable skewers and a la carte dishes served between yakitori courses enrich the New Maki dining experience. The fresh, seasonal vegetables are simply seasoned with a light sprinkle of salt or a simple dressing to bring out their natural flavor, refreshing your palate and building anticipation for the next skewer. The meal may be concluded with a chicken broth condensed with chicken flavor. Its gentle, comforting taste soaks into your body, warming both heart and soul. The carefully selected sake and wine further deepen the flavors of the meal. The owner, with an eye for perfect pairings, has assembled a wide-ranging collection of exquisite drinks from across the country, from those with fruity aromas to those with rich, full-bodied flavors. If you're unsure, feel free to ask the owner for a recommendation. They will surely suggest the perfect drink to complement your yakitori and mood. Heartfelt hospitality and a tranquil atmosphere. The charm of New Maki lies not only in its food but also in the owner's warm hospitality. While not flashy, the meticulous attention to each customer's pace and preferences provides a deep sense of peace. The detailed and easy-to-understand explanations of the dishes convey a palpable passion for the ingredients. The interior, with its calming wooden tones, is both refined and comfortable. In addition to the counter seats, there are also tables in the back, making it suitable for various occasions like business dinners or anniversaries. It’s the perfect place to unwind and indulge in a luxurious time, surrendering yourself to delicious food, fine drinks, and warm hospitality in a quiet, flowing atmosphere.
