Located in the Dairy Block in Downtown Denver, Bruto is the most unique chef's table you'll found around here and you will NOT be disappointed! It is an unforgettable experience, and definitely worthy of the Michelin Star and the Michelin Green Star for sustainability. Bruto is by reservation only and does not accommodate any allergens is stated on the terms and conditions anything else you need to know about reservation, like they will be serving mushrooms and if you don't like that, then too bad. Because of this, Bruto isn't for those with dietary restrictions and picky eaters. The space itself is vert small but it makes for an intimate atmosphere. We happened to drop by when Head Chef Byron Gomez was working the night. We had an 11 course meal. You aren't told what the meals will be ahead of time. Everything is made in front of you and it's an experience to watch the team create everything. There's an assortment of drinks that range from your basic water to simple cocktails, wines, other spirits, and zero proof drinks as well. At the end of your experience, you are given a sheet that tells you everything you had, the ingredients, and something unique about the ingredients in each course, like for the Cavier + Celeriac we had, the Cavier was "sustainably farmed Cavier from Tsar Nicoulai in California." They also include an "Impact Reciept" as well, showcasing their dedication to sustainability. We really enjoyed our experience here. The crew seemed to actually enjoy working there too, and interacting with the customers. The food was unbelievable and the experience was truly unforgettable.
