Everything you want in a casual neighborhood place with exceptional food and friendly service. Every visit gets better! Small restaurant with a precise kitchen focused on bring out out the best of California’s bounty of fresh produce and ingredients. Menu rotates according to seasons and always has something for everyone. Best to share s few plate according to mood and budget and not get hung up on process. Don’t miss the perfect scallops and mouthwatering duo of beef but all is excellent. Desserts are stunning and never too sweet also keyed into seasons. Wine list is short snd reasonable — great choice all around. Corkage at $45 is fair and waived on Wednesdays. Friendly service there to look after you. Always one of our favorites! Go if you can and reserve since it’s tiny. And popular. Food: 5 Service: 5 Atmosphere: 5

What can I say I found this dining experience very disappointing. We ordered the Uni and the tuna tartere for starters. The Uni is a very strong, acquired taste that I personally didn't like but I also didn't experience any of the unique flavor profile the waitress described. The only thing you could taste is the Uni paste; no acidity, no sweetness and definitely not the meager little waffles cut into it. The tuna tartere was also tiny portion for the price but decent. We had the duck and the strip steak for entrees. The cook on the meat was correct, but again, not spectacular. The seasoning was, for a lack of better word, basic. We could also see the kitchen staff cut and throw away a lot of the "corner" pieces of the duck meat which just felt wrong. Only four little pieces of duck made it to our plate accompanied by a too sweet potato gratin or whatever that was. The steak/short rib dish was even more disappointing, the meat was cooked fine I guess but the whole dish and especially the puree reminded me of hospital food. The asparagus were not cooked properly. No spice, no acidity, no complexity, no depth in the flavor profile. Really regretting coming to this place. Lastly we had the brownie which was yummy, chocolaty and crunchy on top but was soaked in a mint paste that we had to scrape away to be able to taste anything else. The atmosphere is your average I-am-going-to-charge-double -for-no-reason. I personally do not enjoy when the waiter interrupts my meal to ask me how it is, especially when they don't offer to make it up to me when I say I don't like it. You are better off not asking then. All in all very disappointing. My son is a foodie and an aspiring chef so was hoping to give him an unforgettable meal. That was not it. Price per person: $90–100

WOW! Backbone was so amazing, seriously. Backbone could receive a Michelin Star for their food if it were more well known. This spot is literally a hidden gem of Montrose. I have eaten in very fine dining restaurants before and the experience at Backbone easily tops the list. Not only was the food absolutely superb, but put waiter Kyle was awesome as well. I had the duck breast and my girlfriend had the Sea Bream which was so light and flavorful. As I said, I had the Duck Breast, and wow again, it was so good, there was a bit of spice in the black rice but the duck was cooked to perfection and the sweet potato cake that accompanied it was the perfect pairing. This is our new favorite spot to have a fine dining experience. I am only writing this review because this cuisine was so amazing and we want to give credit to the chefs, otherwise we would be keeping this amazing place in our pocket so it doesn't get blown up. I write a lot of reviews, but for real Backbone was a serious unexpected surpirise. Food: 5 Service: 5 Atmosphere: 5
