Depending on the outside temperature (and changes in temperatures), the rolls can rise differently. Of course, we immediately adjust our parameters so that they are always nice and large. Since we don't use Chinese pumpkin seeds, but rather regional seeds, our pumpkin seeds don't "stick" to the bun quite as well. That's why we put our seeds on the top and bottom of the bun. We also shred our pumpkin seeds, which are then also used in the dough. So there may just be a visual lack of cores on top. There's enough inside. Promised!
