-Raw beef is being stored above fish and other foods in the single door refrigerators. Raw beef must be stored below raw fish. Ready to eat foods must be stored above raw meats.
-Bowls of vegetables are nested with in each other in the bain marie. Do not nest items in food.
-Wet wiping cloths at the sushi bar are not being stored in sanitizing solution. Store all wet wiping cloths in sanitizing solution.
-Raw shrimp was being prepared while active dish washing was occurring. Dish washing and food preparation can not occur at the same time at the three bay. Clean and sanitize three bay before washing dishes or doing food preparation.
