I'm going to caveat this review by saying that I was very jet lagged and we left early because of this. So I'm only eating half the menu (left after the waygu meat patty with caviar) The service is over the top, which I personally don't love because it feels too formal but I've rated it 5 stars because it was truly attentive. The chef comes and tells you about the dishes and is obviously very passionate. We just didn't really get the food or like it very much. Could be a palate thing but honestly I expected bolder flavors for a Thai fusion. It was kind of bland. Maybe the cost is almost justified because of the rare and high quality ingredients? We didn't get any pairings and went away pretty unenthused about the food. :( if it was amazing we would have definitely soldiered it out through the jet lag but we just gave up because we weren't excited to be there.

Bia is, for me, the real definition of Thai fine dining. Honestly, much better than a lot of Thai fine dining in Thailand, where chefs often push flavors too aggressively. Here the balance is the key. Flavors are clean, well measured, and built around excellent products. Thai flavors are elevated without killing the dish with spices or heat, and the product is always respected. The experience feels like an omakase, with clear kappo and kaiseki influences. The chef is very talented, and the place has a strong Japanese influence in protocol, atmosphere, and overall style.
