Always booked for a reason Hard to find fault. Excellent food and a good selection of natural wine (a little more from Italy and Slovenia, please), lovely atmosphere. Hard to get a table but well worth it. A little expensive by Japanese standards, but you try getting that quality of food and wine in another country for the same price. Do NOT book this restaurant unless you are 1000% sure your plans will not change for any reason as they will charge you USD 55 per person to cancel (even if you cancel within their own cancellation period). My husband was sick on our trip so I tried to change my reservation. When I changed the date the person on the phone did not tell me I could not cancel it if needed. I cancelled (with 3 days notice) but they still charged me $110 - even though they have more than enough time to fill the space. Completely unacceptable use of a cancellation policy. Tokyo has so many amazing restaurants which you should go to instead of here.

This a wonderful gem of a bistro in the heart of Ginza. I was worried about the cuisine being described as fusion, I think other places don’t do it well. Bistro Simba does do it well, and we felt like we were in the chef’s home, where he prepared French style food cooked with Japanese ingredients. We chose the six course tasting, which was plenty of food without over-stuffing ourselves. I wish I could say I had a favourite dish but they were all memorably delicious. We loved the shishamo and the beautiful roasted pork, and the chestnut cream dessert. It’s all heavenly, you can’t go wrong. They also were very accommodating of a shellfish allergy that we made note of in the reservation, which we were very grateful for. Natural wine was served by the glass at a very reasonable price. The restaurant is cozy and buzzing with a really lovely atmosphere. Service was incredibly warm, even though my Japanese is limited and the waitstaff spoke little to limited English. The charming chef himself came to serve the first course and offered a hearty goodbye when we left. Book in advance, you won’t regret it. The menu at the restaurant is entirely in Japanese, if you can’t read Japanese then it would be worth the having a glance online to see what the offering is like.
