Nice bistro with food prepared to a high standard. However, I would say the service started strong but unfortunately weakened over the evening. We were welcomed very warmly and offered a glass of wine but we had to chase up another drink as we weren't asked if we wanted one when any of the courses were brought out. Once we had been served our last course it was like we ceased to exist and getting the bill was a long process that meant we spent almost 30 minutes after finishing still at the restaurant. We had a wonderful dining experience at Bistrot64. The restaurant immediately makes a great impression with its understated elegance, thoughtful interior design, and relaxed atmosphere. The service was impeccable throughout the evening: attentive without ever being intrusive, with every dish introduced through clear and engaging explanations. The experience started beautifully with a welcome aperitif of homemade taralli, homemade tomato concentrate, and grilled olives. It was a simple yet memorable opening that perfectly set the tone for what followed. The tasting menu felt like a journey that kept improving course after course. The first amuse-bouches showcased great technique, although not all of them were equally memorable in terms of flavor. The carrot pâté tartlet was beautifully presented but slightly understated, while the beetroot taco felt a little unbalanced. On the other hand, the pepper sphere was outstanding, delivering both precision and an explosion of flavor. The watermelon, Grana Padano, and tomato dish was probably one of the most technically elaborate plates of the evening. While fascinating, I felt the delicate flavor of the watermelon was slightly overshadowed by the Grana, making the balance less harmonious than expected. The lentil dish was another interesting course with excellent ideas behind it. Personally, I would have preferred the lentils to be cooked a little longer, as they remained firmer than I usually enjoy, although I appreciate that this may simply reflect the chef's intended style. From that point onward, the menu truly reached another level. Both the butter linguine and the Carbonara were exceptional, with the linguine being one of the highlights of the evening. It was a perfect example of how seemingly simple ingredients can be transformed into something elegant and deeply satisfying. The grilled beef with puntarelle was my favorite dish overall. The meat was incredibly tender, perfectly cooked, and paired beautifully with the slight bitterness of the grilled puntarelle, creating a combination that was both refined and comforting. Dessert featured kiwi with a delicate glazed coating incorporating kiwi seeds. It was refreshing, light, and beautifully executed. While it impressed more through its freshness than its intensity of flavor, it was an elegant way to conclude the meal. The petit fours were an excellent finale. The macarons were full of flavor, the sponge cake inspired by an African recipe was both delicate and surprising, but the absolute standout was the Rocher with its hidden raspberry center, a delightful final bite that perfectly rounded off the experience. I also appreciated the option to add one traditional Roman pasta dish (Carbonara, Cacio e Pepe, or Amatriciana) to the tasting menu. It provides the perfect balance and prevents the eight-course menu from feeling overly repetitive. The only small disappointment was that both guests at the table had to choose the same pasta. Allowing each diner to select a different dish would make the experience even more enjoyable by encouraging sharing and comparison. Overall, I would probably rate this experience as 4.5 stars because of a few small details that could be refined. However, I am happily giving five stars in recognition of the remarkable amount of research, creativity, and dedication that clearly goes into every aspect of the menu.
