Accompanied by my wife and our 5-year-old daughter Vahiné, we were enchanted by the subtle balance between modernity and authenticity that permeates the atmosphere of this exceptional place. As soon as we arrived, the warm welcome orchestrated by the chef's wife enveloped us in a feeling of family well-being. Despite the requirements inherent in its three stars in the guide, the service was meticulous and yet of a welcome relaxation, letting us savor every moment without feeling the slightest pressure. One aspect that has truly captured our hearts as parents is the attention given to our daughter. Throughout the meal, she was treated with touching kindness, benefiting from little touches that brightened her experience. An aperitif adapted to his young age, followed by a request from the chef's wife to find out his culinary preferences. The chef performed brilliantly, preparing mature meat of rare excellence, accompanied by impeccably cooked fries. To top it off, she was invited into the kitchen where she took part in a workshop to make her own dessert, to the warm applause of the brigade. When she left, she even received a chef's hat as a souvenir, bringing joy that was both brilliant and moving, both for her and for us. Tim Boury's cuisine is a sensory journey where influences from around the world (Asia, Central America, among others) blend harmoniously into each dish. However, it would be wrong to qualify these creations as fusion food, as they bear the mark of a unique signature. Textures, flavors and cooking intermingle on the palate, alternately offering delicate caresses to the taste buds and taste explosions that linger for a long time, lining the palate. Each bite is a journey in itself, awakening our senses and nourishing our soul. As for the wines, the menu offers magnificent references. To accompany our meal, we opted for a Puligny 1er cru, which blended harmoniously with the seafood portion of the menu, and a red Burgundy from Maison Leroy, bringing an earthy touch to our taste experience. The Boury restaurant is undoubtedly one of the most beautiful restaurants in Belgium, but it is above all our favourite.
