This was our second time going to Brasa, although the first was back in early 2020 before COVID, so it has been quite a while. It was good enough that we were looking forward to going back again. It seems like things may have changed quite a bit and our most recent experience was lackluster at best. The problem appeared to be staffing, because the food generally was fine overall. They seemed to have only about 3 or 4 servers working for a dining room that was 50-75% full. The servers were taking orders, bringing drinks, and handling the checks, but they were also the ones going around the dining room with the meats. This meant that at any given time there were MAYBE 2 servers bringing around cuts of meat for the entire dining room, which just does NOT work for a rodizio style restaurant. On top of that, it seemed like each server was only taking the meat to their own tables. On countless occasions we watched other servers walk right by our table with our green coasters clearly visible and disappear back into the kitchen, only to come back out to greet a table that had just been seated and take their order. We were there for 90 minutes and most cuts of meat came by only once. I'd say we spent about half that time just waiting, and if we didn't specifically ask for some cuts of meat we would never have seen them. As I said earlier, the food was good when it finally materialized, but the long waits and the need to flag down servers kind of defeated the purpose of the rodizio dining. I'd be amazed if I managed to get the equivalent of a single 12 oz steak throughout the course of the evening (other cuts aside). Our server did his best, considering that he appeared to have 6-8 tables once we started counting to pass the time. This is something that management will need to solve by adding more staff or by finding a way to deploy their current staff more efficiently.
