Does it get any better than this? That was a recurring reminder that we were on planet earth as we feasted on the magical qualities served at this restaurant that defied conventional labels & descriptions. Calling itself a “bistronomic” restaurant sounds almost comic. That word, & many others, don’t come near it. This special place is so much more & it’s best to defer to the restaurant’s own introduction: “Its wide open kitchen & counter, its large covered terrace, its talented chef, its warm welcome at lunch & dinner make it an ideal human & taste-focused experience to elevate the ordinary.” There are three parts to this whole - on the terrace, at the counter looking to the kitchen across the pass, or in the glass-roofed back room cozy & often flooded with summer late sun. To cut to the chase - what a meal. Best we’ve had during our 43 days in our favourite city. Led by Chikuda Kazuma, a chef & one of the new wave kitchen wizards having more than a moment. He ran a Ramen house, Narro, before opening Calice as chef & co-owner. He has a cookbook in his native Japanese that sells like his “dark chocolate creamy” dessert. We started our evening with a caramelised cherry tomato tart enlivened with a basil & red-current mouse. It was so yummy. The caramel enhanced tomatoes tasted more than the little fruit & less than a sugary flavour hit - a balance sitting in nature, just so. Our other starter was like something from a late period of abstraction - lattice work of bibs & bobs of cuttlefish & fennel marinated with elderberry, those tasty, tiny wild asparagus spears & swimming in a dashi jelly with a fermented white strawberry condiment. Nothing could be faulted. The main course we shared was lazily called a “variety of seasonal vegetables ‘next door’”, as if the chef had them picked by his staff without much thought. Nonsense! This was as thoughtful as everything else. A variety indeed, & it’s difficult to name them all (beetroot, rocket, carrot, baby courgette, a few slices of new potato & some fennel - probably at least some of these) before your attention is grabbed by the quenelle of Stracciatella ice cream, seed crumble, & a citrus vinaigrette. The variety of presentation the vegetables are given - roasted, grilled, raw, pickled or puréed - is contrasted by the smooth ice cream & its sharp citrus fellow traveller. Again, balance as natural as it was precise. The best (in my mind & mouth) was saved for last. It’s called “incredible & utterly decadent” in one review - it was. A chocolate vaulting sail - looking like one of the bonnets worn in A Handmaid’s Tale - sits on a treasure trove of taste & texture: creamy buttermilk foam, crispy black sesame ice cream, a drizzle of olive oil, lurking, all sprinkled with “Fleur de sel” a hand harvested mineral salt that’s smoked over wood, adding a flavour that puts unique back into that overused word. It was the best we found in Paris. We’re going back on our last night - if you’re in these parts (Calice is at 5, Rue de Bazeilles, 75005, Paris) look it up.
