Celebrated our 37th wedding anniversary at Calusa, the food was beyond superb, our server Justin was so attentive and friendly, the manager Danielle also visited our table and was so kind. The hostess was very welcoming and I wish I knew her name as she was our first interaction and she was amazing! We had an excellent experience. Highly recommended!!! Just finished our dinner and everything was superb. Justin was an absolutely amazing server with a personality that is welcoming and extremely friendly. The food was outstanding and the drinks were excellent. They even made a special drink for my wife and let her try it first. I rarely leave negative reviews, especially for a property we’ve genuinely enjoyed over the years, which is why this experience at Calusa at Baker’s Cay was so disappointing. We chose Calusa to celebrate my mother’s birthday and even noted the occasion in the reservation. Unfortunately, not a single staff member acknowledged it throughout the evening. For a restaurant positioned as an upscale dining experience within a Hilton property, hospitality and attention to detail should be second nature — especially during celebratory dinners. From the moment we sat down, the service felt inattentive and rushed despite the restaurant not being particularly busy. Our server took quite a while to greet us, lacked warmth entirely, and never once checked back to ask how our food or drinks were. Empty appetizer plates piled up on the table for an uncomfortably long time, unused wine glasses remained throughout dinner even though we never ordered wine, and there was no effort whatsoever to guide the dining experience, recommend pairings, or even ask if we wanted a second round of cocktails. Unfortunately, the food did not redeem the experience. The octopus appetizer was noticeably overcooked and lacked the texture and balance you would expect at this price point. The biggest disappointment, however, was the evening special — a seafood pasta in red sauce priced at $48. The dish was honestly inedible. The sauce was overwhelmingly unpleasant, and after two bites I left the entire plate untouched. What was most surprising was that nobody noticed or cared enough to ask why a nearly full entrée was abandoned. In any serious restaurant, that alone should trigger concern from the service staff or management. To make matters worse, when the check arrived (approximately $450 for our table, with 20% gratuity already included), there was an additional cocktail added that we never ordered. What saddens me most is that we are repeat guests of Baker’s Cay and Hilton members who have stayed at the property numerous times. We came expecting the warm, polished hospitality that luxury resort dining is known for, especially for an important family celebration, and instead left feeling overlooked and disappointed. This review isn’t written out of anger — it’s written because this restaurant and property are capable of so much better. I genuinely hope management takes a closer look at the service standards and guest experience at Calusa, because special occasions deserve more care than what we experienced that evening.
