We visited this place because we wanted to try some traditional Roman food, including tripe, snails, brains, sweetbreads and, of course, pizza. We ended up ordering far too much and unfortunately didn’t have any room left for pizza—but judging by everything else, I’m sure it would be excellent here. Everything we tried was packed with flavour—nothing was bland or under-seasoned. The staff were very attentive and polite, and the seating was particularly comfortable, with plenty of space both on the table and between the tables. The Fritto Romano was a great starter. It was a mixture of fried brains, sweetbreads and various vegetables, making it a really good way to try both brains and sweetbreads in one dish. Everything was crispy, tasty and nicely prepared. The Roman-style tripe was amazing, as always. It came in a rich, flavourful sauce, with the tripe soft and almost melting in your mouth while still retaining that slightly chewy texture you want from a good trippa. Absolutely delicious. We also went for cacio e pepe, one of Rome’s classic pastas. The pasta was freshly made, and that really does make a difference. It felt genuinely authentic and was beautifully creamy, peppery and full of flavour. And then there were the snails, which we were particularly excited to try. We’d previously had snails in France, prepared with garlic, butter and herbs, so this was a completely different experience. Here, they were cooked in a rich tomato sauce, and they were incredibly tasty—deeply savoury, juicy and absolutely mouthwatering. We also discovered something quite interesting: the snails traditionally used in this Roman dish are essentially ordinary land snails—the same kind you might see in everyday life. It’s amazing what a difference the right preparation can make! Overall, definitely highly recommended. Everything felt traditional, homemade and full of character. And if you visit, make sure you leave some room for the pizza—we certainly wish we had! We absolutely loved this small, local trattoria. I had never had squisito before. I had to try it. And I am glad I did. The fried artichoke was to die for. Caccio pepe, the local specialty, was very good. The wine, house red, was so smooth. You don't have to go downtown Roma to get it's flavor. It's right here.
