An excellent dining experience at the Banff Springs! The food was stellar, the wine list was nearly intimidating and our server (Micah) was truly delightful. This is the place to dine at the hotel! Food: 5 Service: 5 Atmosphere: 5

I had been searching for Ice Wine at many different restaurants, but nowhere seemed to have it until I finally visited the Ramsay Bar. It was worth the wait! As a dietitian, I’m usually very selective and it can be frustrating for me to choose just one dish because I want to make sure I’m ordering something truly excellent. Alan was incredibly patient and professional; he took the time to explain everything about the wine, the food, and the desserts, helping me make the perfect choice. The food was delicious and the experience was outstanding. If you are looking for authentic Ice Wine and world-class service, definitely ask for Alan at the Ramsay Bar! We had a great experience at Castello Italiana in the Fairmont Banff Springs. Our waiter David was incredibly friendly and provided exceptional service. He’s honestly the best waiter I’ve met across all the Fairmont hotels I’ve stayed at around the world. The shrimp was also amazingly tender. Highly recommend!
