I’ll be honest—I was a bit skeptical at first, but thanks to my wife’s insistence, we ended up at Chaibar in Naperville today. As a true Rajasthani, I was tempted to try their dal bati thali and give it a proper critique. But then something else caught my eye—the chaat platter. And wow, it did not disappoint. The kachori with aloo sabzi, dal ki pakodi, gol gappas (a.k.a. pani patashi), and kanji vadas were simply superb. The chole tikki and dahi bhalle could use a little more punch, and unfortunately, our papdi chaat never made it to the table. That said, overall the flavors were on point. Next time, I’ll definitely try the Rajasthani thali—especially since I overheard a Tamil couple raving about it. Great job, Chaibar team. Looking forward to many more visits!
