I've always been a big fan of Moon Rabbit and Chef Kevin Tien's work, and his incredible skill really shines through at his new concept, Chao Ban. The name itself translates to "hello friend" in Vietnamese, which is such a warm and welcoming touch. Given his track record, I walked in fully expecting to love the food, and it absolutely delivered. For my meal, I tried the salsa shrimp chips, fish sauce wings, fish sauce Brussels sprouts, and the catfish banh mi. Everything was phenomenal. Blending Latin and Vietnamese cuisines is a unique concept, but the fusion was executed flawlessly here. Every single dish was cooked to perfection and packed with rich, vibrant flavors that complemented each other beautifully. I highly recommend giving this place a try. It is not every day you come across a Latin-Vietnamese fusion, let alone one that is done this incredibly well. It is definitely a standout experience with very friendly staff. Delicious food! We got the catfish banh mi and the spicy peanut noodles (added chicken). The catfish has a nice crunch and the peanut sauce had a good heat to it. Best thing I've had so far this month! Ban mi Sandwich and iced coffee was amazing, and the service was super fast and very courteous. I will definitely be back to try other things on the menu.
