This used to be my regular haunt, and the beef noodle soup was authentic. The noodles boasted that perfect "QQ" texture (a Taiwanese term for chewiness), while the beef and soup delivered rich flavor. They always included pickled greens, the quintessential finishing touch that truly encapsulated the essence of Taiwanese beef noodle soup. However, on my recent visit, I was disappointed to find that they've replaced the pickled greens with Japanese-style pickled yellow daikon. It's not the same. Though seemingly a minor component, those pickled greens are essential, contributing to the dish's distinct Taiwanese identity.
