It's a pleasant experience to eat nicely cooked wagyu steaks, beef and prawns. The chef at this bar cooks tasty strawberry dessert, crème brûlée and chocolate mousse. You will hardly forget good martinis or delicious wine that you can drink. Great coffee is among the most popular drinks at Chop.

We had a 7pm reservation for patio seating on a summer Thursday evening when campus was quiet. The wait staff were attentive, very welcoming, and knowledgeable about the menu and any questions we had. We started with the Baked Brie and Truffle Honey appetizer- sooo good! The Filet Mignon with Maître d butter is very reasonably priced and was cooked perfectly (medium rare is definitely the sweet spot!). We finished with a "Late Night With Tony" Espresso Martini and shared a generous slice of the Fresh Silk Strawberry Shortcake with Berries and Crème Fraichell. This was a 10/10 dining experience for us, and Chop is now in our top 5 restaurants in Pueblo (we've been here 13 years and tried them all). Will definitely be back. We had a lovely experience at the Chop restaurant. My brothet is visiting from Oregon, anf we decided to try this restaurant. Our server was Kelci and she was wonderful. We never lacked for service and the food came in a timely manner, but not to quickly either. The food was great. The steaks were exactly the right temperature and the creme brulee was so smooth and melt in your mouth. We will be back. Thanks for a great experience. I can't believe we waited this long to come experience Chop! The whole visit was classy, beyond what I would have hoped for a restaurant at a community college. This was truly FINE dining at every turn. The drinks were super, the steak was top tier, the sea bass was so good. The ambiance was beautiful and we loved the outdoor seating! My wife said this is her new favorite restaurant in Pueblo and I agree. Will be back soon... with friends!
