Let me preface by saying that by weight, I’m more panucho than person. So I don’t mean it lightly when I say that these were the best panuchos and cochinitas I’ve ever had. This meal will live rent free in my head for the rest of my life. Is it worth going to Mérida then trekking 30 minutes out of town for? Absolutely. You should do it.
