I could tell right away that the espresso at Cosmo was going to be awesome. Watch Cosmo co-owner Miguel pull a shot (or make a drink) and you can see that he's serious. He knows that good ingredients and good process result in great drinks. And his espressos are uniformly excellent: with good crema and body, slight sweetness, and no bitterness whatsoever. We know first-hand because we drank many of them over our visit to Merida. Everything else about Cosmo is equally impressive. The atmosphere is casual, yet sophisticated: clean and simple, with a front room; a small courtyard; and a shaded alcove. Dani, host and co-owner, is adept at making people feel comfortable, as are other staff. They pay attention without being intrusive, a mark of true hospitality. The food at Cosmo is delicious. I tried many of the breakfast items on the menu and loved them all. They were well-prepared, fresh, tasty and distinctive. I particularly liked the breakfast muffin (eggs, bacon, and gouda with Tabasco mayo on a delicious English muffin) and the house Chilaquiles Rojas with a tasty homemade salsa macha. We also devoured an excellent almond croissant. In short: Cosmo is exactly the kind of place you want to discover on your holiday: friendly, intimate, simply excellent.
