I visited Trattoria da Enzo about a week ago during my first trip to Rome, for what I hoped would be a memorable dinner. A friend had convinced me this was the place for the best carbonara in the city (high expectations, to say the least). We queued for about 1 hour and 30 minutes before getting a table. I'll be fair: I made that choice myself, and nobody forced me to wait. But once seated, the atmosphere and the staff made up for a lot of it. The Italian team is genuinely brilliant, warm, lively, and welcoming in that effortless way that only Romans seem to pull off. There was a small moment of friction with our waiter, who was quite insistent on upselling bread we really didn't need or want, but it wasn't enough to spoil the evening. And the carbonara? Honestly, it was very good. Creamy, rich, perfectly executed. No complaints on the food side. That said, after exploring Rome further that week, I found several other spots serving equally excellent carbonara, with zero waiting time. So while da Enzo absolutely delivers on quality, I'm not sure the 90-minute queue is something I'd sign up for again knowing what I know now. Worth a visit if you're patient and have time to spare. If you're in a hurry or just want a great carbonara without the pilgrimage, Rome has plenty of options.
