Dolphins Waterfront Bar & Grill at Cape Crossing, 310 Lagoon Way, Merritt Island, Florida 32953- 5-Stars Nestled on the historic Canaveral Barge Canal in north Merritt Island, Dolphins Waterfront Bar & Grill was packed. On its website it boasts that it is the largest tiki bar & restaurant on the Space Coast, so that was a very good sign. As I have repeatedly stated, there are only about twelve true chefs in Brevard County. Everywhere they go they create food with love, which is what Chef Joe Knudsen does wonderfully here. At Dolphins Waterfront, the food is fantastic, the atmosphere amiable, and the service superb. Dakota was our waiter. He was a very friendly fella, robust and a perfect fit for the Big Boy mold of genius. I ordered the Chef's Ceviche to start, which came with yucca chips made in house. Excellent. This ceviche was not a wet ceviche, so I was not overwhelmed with acid. Instead, I got to savor all the wonderful flavors. You would think that ceviche prepared in this way would be a total no brainer, but I guess it is not. I would go for Knudsen's ceviche in any all-out strategic exchange for the typical ceviche out there dripping in juice. I followed the ceviche with the Tingley Burger, described on the menu as an ode to local history, half-pound of chuck, brisket, and short rib on a kaiser roll, served with lettuce, tomato, onion, and choice of cheese. Cooked to temp, I ordered mine med rare, of course. Perfecto. Lastly, I tried the Aloha Curry, advertised as loaded with shrimp, PEI mussels, white water clams, and fresh fish, and served over jasmine rice. This was my stretch dish. Do or die. Make or break. It was MAKE! While the ingredients were not top shelf, they were used wisely. The sauce was delicate and creamy, with just a tad bit of punch at the end. This was a pleasant dish even for those who don't like spicy food. The Big Boy says, "Dolphins Waterfront gets 5-Stars all day every day."
